
A Slice of History: Electric Dough Pizza Co. Revives San Marco Theatre
Hey everyone, I’ve got some really exciting news for all you food lovers and local history buffs out there! A new pizza joint has just opened up in Jacksonville, and it's not just any ordinary place — it’s where the old San Marco Theatre used to be. That’s right, the legendary movie house that stood proudly at 1996 San Marco Blvd. has been transformed into something totally fresh — meet Electric Dough Pizza Co.

Now, this isn’t your average pizza spot. Chef and owner Tom Gray, who you might know from Prati Italia and Town Hall, has created something totally unique here. He’s blending Roman-style dough with Detroit-style baking techniques. Sounds wild, right? But trust me, it works. The Roman dough is fermented for 30 hours — yep, a day and a half — and that gives it this amazing light, crunchy texture. It may look thick, but don’t expect that heavy, cakey crust. This stuff is airy, crisp, and full of flavor.
What’s really cool is how they’re baking these pizzas. They’re using an electric oven that lets them dial in the heat on the top and bottom separately, which makes a big difference. The result is a rectangular pie with minimal crust, classic Detroit-style, but with a modern twist thanks to the Roman dough and precision baking.
The space itself is something else. It’s 4,200 square feet and can seat up to 130 people depending on the outdoor seating. They worked with the design firm ai3 from Atlanta and Jacksonville’s own Urban Partners Construction to completely renovate the building — but not without preserving some of its charm. The original brick walls are now exposed for the first time since the theater was built back in 1938. There are nostalgic touches everywhere. One of the most striking is the original film projector at the entrance — yep, they kept it and gave it a place of honor. There’s also accent molding above the open kitchen that looks like old theater curtains. And get this — they’ll even be showing silent films on the wall opposite the kitchen. How cool is that?
Tom Gray didn’t do it alone either. He partnered with Pam Smith and Cliff Pleau from Shaping America’s Plate. Pam’s a registered dietitian and is all about fresh, seasonal ingredients. You can really taste that care and creativity in every slice.
